Ingredients
- 1/2 cup chopped red/green peppers
- 1 - 1/2 cup greated hard cheese of choice
- 1 -1/2 cups chopped ham
- 1/2 cup chopped onion
- 8 large eggs (beaten)
- 1 cup milk
- 1/2 tsp. season salt
- 2-3 slices bacon (chopped)
Directions
Spray a metal 7 1/2 x 12 pan, 6 mini-loaf pans or mammoth muffin pan of 6 with cooking spray.
Sautee chopped bacon, add other meats and vegies and continue to sautee until almost caramelized but not dry.
Layer meat/vegies in pans, then cheese.
Beat first 3 ingredients and pour evenly over layers.
Bake at 325 degrees until table knife, inserted, comes clean.
When taken out of oven, let stand for a couple of minutes. Serves nicely.
Great garnished with an X of bacon slices or link sausages.
Sauteed vegetarian ingredients easily substituted, ae. spinach, celery, cherry tomatoes, peppers and onions.
