Silver Lake Lodge Denver Omelette

We modified the classic Denver Omelet and made an easy to prepare recipe for large groups. This dish makes for a great Sunday breakfast or even lunch!

1/2 cup
diced yellow onion

olive oil

1 tsp
salt

freshly ground black pepper

chili flakes

1 cup
shredded cheddar cheese

1/4 cup
milk

1 cup
diced ham

1 1/2 cups
diced peppers

large eggs
- Preheat oven to 350
- Butter a 9x13 baking dish (we use glass)
- Put olive oil in a large pan over low heat, add the diced onion and cook for a few minutes, covered, so the onions begin to soften
- Add the diced peppers and cook a few more minutes
- Add the diced ham and cook until hot/heated through
- Drain well and put in the bottom of the 9x13 baking dish
- In your mixer bowl combine eggs, salt & pepper, Montreal, chili flakes and blend together on medium
- Add the milk to the mixing bowl and blend
- Add ½ cheese to the mixing bowl and blend
- Pour over the ham/pepper/onions in the 9/13 pan
- Sprinkle the remaining ½ cup cheese over the top
- Bake at 350 for 35-45 minutes (depending on your altitude!)
- Cut into portions
- We add a heaping spoon of salsa as a garnish
- A slice of avocado is a great garnish on top of the salsa as well
