From THE SILVER LAKE LODGE

We modified the classic Denver Omelet and made an easy to prepare recipe for large groups. This dish makes for a great Sunday breakfast or even lunch!

Ingredients

  • 1/2 cup diced yellow onion
  • 2 tsp olive oil
  • 1 tsp salt
  • 1tsp freshly ground black pepper
  • 1/2 tsp chili flakes
  • 1 cup shredded cheddar cheese
  • 1/4 cup milk
  • 1 cup diced ham
  • 1 1/2 cups diced peppers
  • 8-10 large eggs

Directions

  • Preheat oven to 350
  • Butter a 9x13 baking dish (we use glass)
  • Put olive oil in a large pan over low heat, add the diced onion and cook for a few minutes, covered, so the onions begin to soften
  • Add the diced peppers and cook a few more minutes
  • Add the diced ham and cook until hot/heated through
  • Drain well and put in the bottom of the 9x13 baking dish
  • In your mixer bowl combine eggs, salt & pepper, Montreal, chili flakes and blend together on medium
  • Add the milk to the mixing bowl and blend
  • Add ½ cheese to the mixing bowl and blend
  • Pour over the ham/pepper/onions in the 9/13 pan
  • Sprinkle the remaining ½ cup cheese over the top
  • Bake at 350 for 35-45 minutes (depending on your altitude!)
  • Cut into portions
  • We add a heaping spoon of salsa as a garnish
  • A slice of avocado is a great garnish on top of the salsa as well
