Baked Lemon Eggs

From INN AT OCCIDENTAL OF SONOMA WINE COUNTRY
1/2 cup heavy whipping cream
1 1/2 tsps finely grated lemon peel
1/2 cup grated Gouda cheese
4 eggs
2 Tbsps chopped fresh parsley
Salt & pepper to taste

  • Liberally butter 4 small baking dishes.
  • Pour 1 Tbsp cream into each baking dish.
  • Sprinkle lemon zest equally into each dish.
  • Sprinkle evenly divided cheese over lemon & cream.
  • Gently break egg into each dish.
  • Add salt & pepper.
  • Pour 1 Tbsp cream over each egg.
  • Scatter parsley garnish on top.
  • Bake 12 minutes or until eggs just set.
