Baked Lemon Eggs

1/2 cup heavy whipping cream
1 1/2 tsps finely grated lemon peel
1/2 cup grated Gouda cheese
4 eggs
2 Tbsps chopped fresh parsley
Salt & pepper to taste
- Liberally butter 4 small baking dishes.
- Pour 1 Tbsp cream into each baking dish.
- Sprinkle lemon zest equally into each dish.
- Sprinkle evenly divided cheese over lemon & cream.
- Gently break egg into each dish.
- Add salt & pepper.
- Pour 1 Tbsp cream over each egg.
- Scatter parsley garnish on top.
- Bake 12 minutes or until eggs just set.
