Oatmeal Cookies with Cranberries & White Chocolate

Preheat oven to 350 degrees

 

1/2 pound butter
1 cup packed brown sugar
1/2 cup granulated sugar
2 eggs
1 teaspoon vanilla
1 1/2 cups flour
1 teaspoon baking soda
2 teaspoons cinnamon
1/2 teaspoon salt
3 cups uncooked oatmeal
1 cup golden raisins OR,
1/2 cup dried cranberries and 1/2 white chocolate chips OR,
1/2 cup chocolate chips and 1/2 cup butterscotch chips

Whisk together flour, soda cinnamon and salt and set aside.


Cream together butter and sugars until fluffy.
Add eggs and vanilla and mix well.
Stir in oats and raisins
Form batter into 1 inch balls and chill in refrigerator for about 10 minutes.
Bake 12-15 minutes or until golden brown.
Let cool on cookie sheet for 2 minutes then remove to wire rack.


Tip: After chilling the cookies, you can store them in a zip-lock bag in the freezer.
Bake them straight from the freezer in a pre-heated oven.
For crispier cookies, do not chill before baking.
