Michigan Apple Muffins

Blue skies, cool air, autumn leaves changing colors. Fall is an enchanting time to visit the wonderful White Lake area. Bike rides past the many orchards will whet your appetite for a variety of apple delights. The following muffin recipe is a favorite of guests at the White Swan Inn B&B.

1-1/3 cups all-purpose flour
1 cup quick-cooking oats
2/3 cup sugar
1 tablespoon baking powder
1-1/2 teaspoons ground cinnamon 1/2 cup milk
1/3 cup butter, melted
1/4 cup maple syrup
1 egg, lightly beaten
2 cups chopped peeled Michigan apples
ICING:
1/3 cup powdered sugar
2 tablespoons maple syrup

Preheat oven to 400 degrees. In a large bowl, combine dry ingredients, mixed well. In a small bowl, combine liquid ingredients. Then stir into dry ingredients just until moistened. Fold in apples. Fill paper-lined muffin cups three-fourths full.

Bake at 400 degrees for 18-20 minutes or until muffins test done. Remove to wire rack. Cool completely.

For icing: mix powdered sugar and syrup. Drizzle over muffin tops.

Yield: about 1 dozen.
