Gazpacho

Directions

Ingredients:

• 2 Jalapenos
• 1 Pound of Tomato Concasse
• 10 Ounces of Green Peppers
• 5 Ounces of Green Onions
• 10 Ounces of Seeded and Peeled Cucumbers
• 10 Ounces of Celery
• 1 Teaspoons of Basil
• 2 Teaspoons of Tarragon
• 2 Quarts of Chicken Stock
• 3 Ounces of Olive Oil
• 3 Ounces of Balsamic Vinaigrette
• 4 Teaspoons of Worcestershire
• Salt, Pepper, and Tabasco to Taste

Method of Production:

1. Combine all the ingredients and refrigerate until well chilled.

2. Puree until smooth.

3. Taste and adjust seasonings with salt, pepper, and Tabasco.

4. Croutons make a great garnish.
