Pumpkin Bisque


2 cups of canned pumpkin
1 oz butter
2 tbsp of fine dice shallots
1 or 2 colves of garlic (Finely diced)
3/4 tsp of allspice
1/2 tsp of cloves (Ground)
3 tsp of cinnamon
3/4 tsp of nutmeg
1/2 cup of brown sugar
4 cups of cream

Method of production:

Melt butter over medium to medium low heat.
Add shallots and garlic and saute until tender
Add pumpkin, spices and brown sugar and blend well
add cream and stir to combine
reduce to low and cook for 20 to 30 minutes until flavor are combined and a good consistency develops. (Add more cream and water to thicken if needed)
Taste and adjust seasoning
