Broccoli Salsa Baked Eggs

  • 8 oz. Ground Sausage
  • 10 oz. pkg Chopped Broccoli
  • 8 Eggs; lightly beaten
  • 1 cup Ricotta Cheese
  • 1/4 cup Milk
  • 1/2 tsp. Black Pepper
  • 1/2 tsp. McCormick's Seasoned Salt
  • 1 1/2 cup Cheddar Cheese
  • 1 1/2 - 2 cups Medium Salsa


Preheat oven to 350 degrees.  In a skillet, over medium high heat, brown the sausage evenly.  Drain and crumble the sausage and set aside. Lightly grease a 7" x 11" glass pan.  Microwave the broccoli until about half cooked and drain off any liquid.  You may use either fresh broccoli or frozen.  In a bowl, combine sausage, broccoli, and 1/2 cup cheddar cheese.  Spoon into the prepared baking pan.  Stir together another 1/2 cup cheddar cheese, eggs, ricotta cheese, milk, pepper, and seasoned salt; pour over the broccoli mixture. Sprinkle the remaining 1/2 cup cheddar cheese on top.  Next, top with the mixture with spoonfuls of salsa.  Loosely cover with tin foil and bake 1 hour or until eggs are set.  Allow to set for about 5 minutes before cutting into squares for serving.  Serves 12.
