Lyn's Oatmeal Peanut Cookies
From SWAN HOUSE BED & BREAKFAST
1 cup shortening
1 cup packed brown sugar
1 large egg
1 1/2 cups all purpose flour
1 tsp. vanilla extract
1/2 tsp. cinnamon
1/2 tsp. baking soda
2 cups oatmeal
1 cup red skin Spanish peanuts

1 cup red skin Spanish peanuts
In a large bowl, place shortening, brown sugar, egg, and vanilla extract. Beat well with a mixer. Gradually add the flour, cinnamon, and soda. Stir in the oatmeal and peanuts. Drop by tablespoonfuls on an ungreased cookie sheet. Flatten each cookie slightly with your palm, then bake in a preheated 350 degree oven for approximately 10 minutes. Remove from oven and transfer to cooling racks.
Makes about 2 dozen
