Eggs In A Basket

Preheat oven to 300 deg.
Spray extra large muffin tins with olive oil (or canola oil) non-stick spray.
Line cups with slice of cheese bread (i.e. cheddar or asiago).
You may want to microwave bread for ~30 secs to soften and cut off crust.
Place slice of Provalone (or Swiss) cheese inside bread cup.
Then place a thin slice of ham (or Canadian bacon or smoked bacon) in the cheese cup.
Crack a fresh large egg into each cup.
Season as desired (I prefer Mortons Nature Blend).
Bake about 30 minutes, or until eggs are set.
Remove from oven and sprinkle with grated cheddar (or any cheddar blend) cheese.
Top with fresh herbs, as desired.
Increase oven temperature to 350-375 deg. and bake and additional 5-10 minutes until cheese is melted.
Serve topped with freshly ground black pepper and tomato slices on the side.
