Blueberry-Oat Muffins

Directions

1 cup quick oats
1 cup sour milk or buttermilk
1 cup flour
1/2 tsp baking soda
1/2 tsp salt
1 tsp baking powder
2/3 cup brown sugar
1 egg, beaten
1/2 cup butter, melted
1 cup blueberries

 

Combine oats and sour milk. Let stand for awhile. Combine flour, baking powder, soda, salt and brown sugar. Stir well to blend. Add eggs and butter. Mix well. Add oat mix all at once to dry ingredients. Stir just until moistened. Gently fold in blueberries. Fill well greased muffin tins 3/4 full. Bake at 400 degrees for 20-25 minutes.
