Oven Apple Pancakes with Cider Sauce

From ROSEWOOD COUNTRY INN - BED AND BREAKFAST
Ingredients:
1 1/2 cups flour
1/2 cup sugar
4 eggs
2 1/2 cups milk

Put all ingredients in blender and whirl until smooth. Preheat oven to 425. Preheat 6 6" cast iron skillets in hot oven for 3 minutes. Remove and spray with Pam. Divide batter among 6 skillets and bake for 20 minutes.

Remove pancakes from skillet, top with apples and cider sauce. Serves 6.

Fried Apples:
Melt one tablespoon of butter in a skillet. Peel and slice 4 apples. Fry apples in butter, adding brown sugar, cloves and cinnamon to taste.

Cider Sauce:
Ingredients:
1 cup sugar
2 tablespoons cornstarch
1/2 teaspoon pumpkin pie spice
2 cups apple cider
2 tablespoons lemon juice
1/4 cup butter

Mix sugar, cornstarch and pie spice in a saucepan. Stir in cider and lemon juice. Cook, stirring constantly, until thickens and boils. Boil and stir for 2 minutes, remove from heat and add butter.
