Choyce's Buttermilk Cinnamon Bread

Directions

1/2 c. oil
2 c. sugar
2 eggs
2 c. buttermilk
2 tsp. baking soda
4 c. flour
1/2 c. sugar
2 Tbsp. cinnamon
1/2 tsp. salt
Chopped nuts (optional)
Preheat oven to 350 degrees and lightly spray two loaf pans. Mix oil, sugar, eggs, buttermilk, baking soda and flour in a large bowl.
Pour 1 cup of the batter into each prepared pan. Combine sugar, cinnamon, and salt into a small bowl.
Sprinkle 1/2 of the sugar mixture over each pan; pour remaining batter equally between pans.
Sprinkle remaining sugar mixture over batter. Using a knife, swirl through batter.
Bake approximately 1 hour or until wooden pick comes out clean. Cool 10 minutes and remove from pans.
Also excellent for toast and French toast as well as baked in large muffin tins or mini-loaves. Freezes well.
