Crispy Oatmeal Corn Waffles

Serve with real maple syrup and yougurt or fruit.

Ingredients

  • 1 1/4 cups rolled oats (not instant*
  • 1/2 cup unbleached flour
  • 1/2 cup cornmeal
  • 4 tsp baking powder
  • 3 Tbs brown sugar
  • 1/4 tsp salt
  • 2 eggs, beaten
  • 1 cup heavy cream
  • 1 cup + 1 Tbs milk
  • 6 Tbs melted butter

Directions

Mix together dry ingredients. Stir in eggs, cream, butter and milk. Let stand for two minutes, then bake in hot waffle iron on medium. The waffles will crisp real fast.
