Chocolate Zucchini Muffins

Ingredients

  • 1 tsp. salt
  • 1 tsp baking soda
  • Small amount of baking Hershey kisses or choc. Chips
  • 1 cup chopped nuts
  • 3 eggs
  • 2 cups sugar
  • 1 cup oil
  • 1 tsp. vanilla
  • 1 tsp baking powder
  • 3 ounces melted unsweetened chocolate
  • 2 cups finely grated zucchini
  • 2 cups flour

Directions

Beat eggs. Gradually add sugar, oil and vanilla.  Add chocolate and zucchini. Stir in flour baking soda, baking

powder, and salt. Add nuts. Place mixture in greased muffin tins

and put about 3 to 4 small hershey kisses on top. Then

sprinkle with a mixture of raw sugar and white sugar.

Bake 25 to 30 minutes or until done. These freeze really

well.
