Zucchini Bread

Ingredients

  • 3 cups Shredded Zucchini
  • 1 2/3 cups Sugar
  • 2/3 cups Oil
  • 2 tsp Vanilla
  • 4 Eggs
  • 3 cups Whole Wheat or All Purpose Flour
  • 2 tsp Baking Soda
  • 1 tsp Salt
  • 1 tsp Cinnamon
  • 1/2 tsp Cloves
  • 1/2 tsp Baking Powder
  • 1/2 tsp Raisins
  • 1/2 cup Chopped Walnuts

Directions

Mix zucchini, sugar, oil, vanilla and eggs very well.

 

Stir in reamining ingredients, except nuts and raisins.

 

Fold in raisins and nuts.

 

Pour into 2 9-inch greased loaf pans.

 

Bake in oven at 350 degrees for 1 hour and 15 minutes.

 

Let cool.
