Mandarin Muffins

20 to 25 minutes


Makes 18 medium-sized muffins


  • 1 11 oz can of Mandarin orange segments
  • 1 tbs. orange oil extract
  • 2 cups and 1 tbs all-purpose flour
  • 2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 cup brown sugar, packed
  • 1/2 cup sugar
  • 1 egg, well beaten
  • 1 8 oz carton sour cream
  • 1/2 cup melted unsalted butter
  • 1/2 cup chopped pecans


Preheat oven to 400°.

Drain oranges and reserve the liquid.  Cut oranges in half and place in a measuring cup.  Add orange extract and reserved liquid to make 8 ounces.  Set aside.

Combine flour, baking powder, soda, salt and sugar in large bowl.  In a separate bowl combine the egg, sour cream, orange mixture, and melted butter.

Make a well in the dry ingredients.  Add the orange mixture and pecans.  Stir to blend.  Spoon into greased muffin tins.  Bake for 20-25 minutes.
