Bill’s (not so) Super Secret Waffle Recipe

Ingredients

  • 1 stick of butter
  • 2 cups milk
  • 1/2 cup water
  • 1 tsp yeast
  • 1 tsp sugar
  • 2 cups flour
  • 2 eggs
  • 2 tsp vanilla
  • 1/4 tsp baking soda

Directions

This recipe makes one batch.  One batch should make about 7 waffles.

The night before:

In one bowl put one stick of butter and 2 cups of milk.  I bring to room temperature. And then heat in microwave for two minutes to reach a temperature of about 110 degrees.  If not at room temp, then you might have to heat longer to get to 110 degrees

In the other bowl put ½ cup water that is between 110 and 120 degrees.  Sprinkle evenly, 1 heaping teaspoon of yeast onto the water.  Sprinkle the same amount of sugar.  Mix and let sit for about ten minutes.  After ten minutes the mixture should have risen to about twice the original height.  Your mileage may vary.

Add the yeast to the milk.  Add two cups flour and mix to smooth.  Put saran wrap over top (tightly please) and place in sink or where overflows will not bother you. 

The next day:

Mix two eggs with two teaspoons of vanilla and ¼ teaspoon of baking soda.  Add to the waffle batter and enjoy.
