Blissful Crab Bisque

From HARBOR HOUSE BED & BREAKFAST
1/2 cup butter
1 medium onion, finely chopped
1 medium carrot, finely chopped
2 tablespoons all-purpose flour
1 teaspoon seafood seasoning
1/4 teaspoon celery salt
1/8 teaspoon white pepper
1 quart light cream or milk
8 to 16 ounces lump crabmeat
3 tablespoons dry white wine
1 tablespoon snipped parsley
Salt to taste
Ground red pepper

In a 3 quart saucepan, melt butter. Add onion and carrot and cook until tender. Stir in flour, seafood seasoning, celery salt, and white pepper. Gradually add cream, stirring constantly. Stir in crabmeat, wine, parsley and salt. Simmer 15 to 20 minutes. Do not boil. Sprinkle each serving with ground red pepper. Serve hot. Makes 6 side-dish servings.
