Our guests always asked for the recipe for this casserole. Of course, we always make them a copy. People who have never tried "grits" before love it and so do Southerners who have been raised on this area staple.
2 # Jimmy Dean Hot Sausage
1 Cup Grits, cooked
1 stick Butter or Margarine
2 Cups Shredded Cheddar Cheese
Salt & Pepper to taste
5 Eggs
1 1/2 Cups Milk
Brown sausage in skillet and spread in 9x13 casserole dish. Cook grits ( use instant and do these in the microwave).Add butter, cheese, and salt and pepper. Cool for a while. Add eggs and milk and pour over sausage. Bake at 350 for about 1 hour.
Note: I sometimes make these in individual ramekins and freeze. When I plan to have them the next day, I thaw in refrigerator overnight and bake as directed.
This way I can serve one or two guests at a time.
