Optional: 2 cup fresh or frozen berries, diced peaches or other fruit
Pre-heat griddle.
In a large bowl, mix flour, baking powder and baking soda. Set aside.
Beat egg whites until stiff but not dry.
Mix buttermilk, milk, maple syrup, egg yolks and melted butter.
Gently stir buttermilk mixture into the flour mixture. Fold in egg whites.
Make sure not to overmix!
Lightly butter griddle and cook pancakes until the top bubbles, flip and cook other side until golden. Serve with real maple syrup.
