Four generations of my family have enjoyed my Aunt Norma’s Coffee Cake, and now my guests get to enjoy it, too.  When six guests recently asked about my Aunt Norma and discovered that they didn’t live far from her in New Jersey, they were determined to visit her and thank her in person for this incredibly moist Sunday breakfast treat.

Ingredients

  • 3 eggs
  • 3/4 pounds butter
  • 1 7/8 cups flour (2 cups minus 1 tablespoon)
  • 1 1 2 cups sugar
  • 11 1/2 teaspoon baking powder
  • 1 1/8 teaspoon baking soda
  • pinch salt
  • 1 1/8 cups sour cream
  • 1 1/2 teaspoons vanilla
  • 1/2 cup chopped walnuts
  • 1/2 cup brown sugar, packed
  • 1 1/2 teaspoons cinnamon

Preheat oven to 375F.

Combine all ingredients except last three. Pour the batter into a greased and floured springform pan.

Mix streusel topping. Sprinkle the streusel on top of the batter.

Bake at 50-60 minutes or until cake tester comes out clean.  Cool; invert on serving plate; and enjoy!
