Arizona High Country Dutch Baby

2Baked in skillets, this delicious treat is a cross between a pancake and a crepe! Beautiful, versatile and most importantly, scrumptious!
Ingredients
- 3 large eggs
- 3/4 cup milk
- 1/2 tsp. vanilla
- 1/8 tsp. salt
- 2 tbsp. sugar
- 1/2 cup flour
- 2 tbsp. butter
Directions
Makes two 8" pancakes. Preheat oven to 400 degrees. In a large bowl or blender, beat eggs until light and pale. Beat in milk, vanilla, salt and sugar. Whisk in flour at the end -- it may look "chunky" but just whisk before pouring into pan and all is good!
Melt butter by placing the pans in the oven for several minutes until butter is sizzling. Immediately pour batter into pans, dividing equally between two 8" oven proof pans. Bake at 400 degrees until pancake is puffed and lightly browned, about 15 minutes. Transfer to plate, fill with sliced fruit, and garnish with syrups, sauces, lemon wedge, or whatever strikes your fancy!
