Spring Ahead Brunch Bake

Spray 9" x 13" pan with nonstick spray or use individual oval 16oz corning dishes. Pre-heat oven to 350 degree's

2 C. Fresh Mushrooms
1 C. Sliced Green Onions or Sweet Onion
1 C. Green or Red Peppers

3 TBsp Margarine -Sauté veggies above until tender & add 3 C. Diced Cooked Baked Potatoes-set aside

In a 4 cup measure mix up 8 Eggs
2 C. Milk
1 TBsp. flour
1/4 tsp Garlic Powder
1/4 tsp Salt
1/8 tsp hot pepper sauce
10 Slices Ham
10 qty 7" Flour Tortilla's
10 Slices Swiss cheese
1 C. Colby-Jack [save half to put over the top]

Place one tortillas out on counter, now layer a slice of ham, Swiss cheese, evenly divide the veggie mixture, and sprinkle half the Colby-jack cheese. Roll tortilla's and put into pan seam side up. Pour egg mixture over top. Sprinkle with the remaining cheese. Let sit at least a 1/2 hour and up five days. Cover with aluminum foil and bake for 40 minutes
