Petit Morning Glorious Muffins

From PETIT SOLEIL BED & BREAKFAST
2 cups whole wheat flour
2 teaspoons baking soda
2 teaspoons ground cinnamon
1 tsp. ground ginger
1/2 tsp. nutmeg
1/4 teaspoon salt
...mix dry ingredients together and set aside

2 cups shredded carrots
1/2 cup raisins
1/2 cup chopped walnuts or pecans
1/2 cup flaked coconut
1 banana, mashed
3 eggs
1 cup canola oil
2 teaspoons vanilla extract
...mix wet ingredients and then add to dry mixture. Spoon into greased muffin cups. Bake at 350 degrees for 20-25 minutes.

Muffins are such a perfect treat, for breakfast, mid morning, mid afternoon or even for dessert! These are healthful and delicious! The recipe for our other favorite muffins are a few blogs back - those have grated zucchini and flax seeds in them! Bon Appetit
