Garden Quiche

Ingredients

  • 1 stick (1/2 cup) butter melted
  • 1 medium onion, chopped
  • 1/2 cup parsley, chopped
  • 2 large zucchinis, cut in-half length-wise and cross cut 1/4" slices
  • 1 bunch scallions, chopped. Include a small amount of the green tops
  • 8 eggs whisked until fluffy
  • 1/3 cup flour
  • 1/2 tsp. baking powder
  • 1 tsp. salt
  • 2 cups large curd cottage cheese
  • 1/2 cup parmesan cheese
  • 1/8 teaspoon red pepper flakes
  • 1/2 cup Jack cheeses, shredded
  • 8 thin slices of Tomatoe
  •   Sour cream
  •   Green onion, chopped (garnish)
  •   Parsley (garnish)

Directions

7X11 baking dish

For the top:
1/2 cup Jack cheeses, shredded
Tomatoes (8 thin slices)
Sour cream
Green onion, chopped (garnish)
Parsley (garnish)

Preheat oven to 400°.  Sauté the onions in two tablespoons of the butter.  Add the vegetables including the onions and remaining melted butter to the eggs.  Separately, mix together the flour, baking powder, salt, cheeses, and pepper flakes, and then add to the vegetable/egg mixture.  Bake for 20 minutes.

Reduce heat to 350°. Evenly spread Jack cheese on top of egg and cheese mixture.  Space the tomato slices over the cheese.  Bake for an additional 45 minutes or until a knife comes-out clean and top is lightly browned.

Add a dollop of sour cream to each portion.  Combine the green onion and parsley and add as garnish.
