Chocolate Banana Oatmeal Muffins (Gluten Free)

When we accommodate guests with special dietary needs, we like to create a menu that all the guests enjoy without knowing there are any “restrictions.” These muffins we created recently has to top our list of favorites!


2 1/4 cup quick cooking oats
3 ripe bananas, mashed
1/2 cup chocolate chips
2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup milk
1/3 cup brown sugar
1/3 cup honey
2 eggs, lightly beaten
2 tablespoons vegetable oil

Pre-heat oven at 375 degrees. Cover 12 cup muffin pan with paper muffins cups. In a large mixing bowl, combine oatmeal, bananas, chocolate chips, baking powder and salt. Add the rest of the ingredients and mix until even consistency. Fill muffins cups 3/4 full. Bake for 25 minutes. Yield: 12 muffins.
