Cajun Crepes

2 c. all-purpose flour (you may use Bisquick mix)
2 to 3 tsp sugar(to your taste) (you can leave out the sugar)
1 Tbsp. Vanilla
1 egg
2 and 1/2 c. milk

Mix all ingredients (batter should be somewhat thin where it pours easily). Pour just enough batter in small heated skillet to cover bottom only. Cook 20 to 60 seconds on right side only. Serve plain or can be topped with peanut butter, fruits, syrup, etc. Can be served for breakfast, lunch, dinner, or in Cajun land we call it supper.
