2 eggs
1/3 cup of shredded cheddar cheese
salt and pepper (to taste)
salsa (garnish) - optional

Preheat oven to 350 degrees.
Grease small (2x4) casserole baking dish.
Place shredded cheese in bottom of dish; form two depression in cheese to hold egg yoke.
Crack eggs in small dish being careful to not break yoke.
Carefully deposit eggs into depressions in the cheese.
Place pans on air pan and back at 350 for approximately 20 minutes.
Remove from oven.
Carefully extract egg from casserole dish by sliding egg from tipped dish.
Serve immediately - garnish optional.
