Marinated Cheese
From MOUNTAIN TOP LODGE AT DAHLONEGA
Ingredients: 1/2 cup olive oil 1/2 cup white wine vinegar 1 (2 oz.) jar diced pimentos, drained 3 Tbsp. fresh chopped parsley or cilantro 3 Tbsp. minced green onion 3 cloves garlic, minced 1 tsp. sugar 3/4 tsp. dried whole basil 1/2 tsp. salt 1/2 tsp. pepper 1 (8oz) block sharp Cheddar cheese, chilled 1 (8oz) pkg. cream cheese or Monterey Jack cheese Fresh parsley - optional
Instructions: Cut blocks of Cheddar and cream cheese in half lengthwise. Cut halves crosswise into 1/4 inch thick slices. Arrange cheese slices, alternating, standing on edge, in a shallow baking dish. Pour mixture in jar over cheese slices. Cover and chill in refrigerator for at least 8 hours. Remove cheese slices to a serving platter and spoon marinade from baking dish over slices. If desired, garnish with fresh chopped parsley. Serve with assorted crackers. |
