Marinated Cheese

1/2 cup olive oil
1/2 cup white wine vinegar
1 (2 oz.) jar diced pimentos, drained
3 Tbsp. fresh chopped parsley or cilantro
3 Tbsp. minced green onion
3 cloves garlic, minced
1 tsp. sugar
3/4 tsp. dried whole basil
1/2 tsp. salt
1/2 tsp. pepper
1 (8oz) block sharp Cheddar cheese, chilled
1 (8oz) pkg. cream cheese or Monterey Jack cheese
Fresh parsley - optional

In a large jar with a lid, combine olive oil, vinegar, diced pimentos, chopped parsley, minced green onions, minced garlic, sugar, basil, salt and pepper. Cover jar tightly, shake vigorously and set aside.

Cut blocks of Cheddar and cream cheese in half lengthwise. Cut halves crosswise into 1/4 inch thick slices. Arrange cheese slices, alternating, standing on edge, in a shallow baking dish.

Pour mixture in jar over cheese slices. Cover and chill in refrigerator for at least 8 hours.

Remove cheese slices to a serving platter and spoon marinade from baking dish over slices. If desired, garnish with fresh chopped parsley. Serve with assorted crackers.
