Quiche Lorraine

Servings: 6-8

9" pastry shell pie crust
12 (approx.) slices bacon
1 cup shredded Swiss Cheese
1/3 minced onion
4 eggs, beaten
2 cups light cream (or fat free half/half)
3/4 teaspoon salt
1/4 teaspoon sugar

Preheat oven to 425 degrees.
Fry bacon in skillet; place cooked bacon on paper towels to drain remaining grease
Coarsely shred bacon into small pieces.
Mix bacon, shredded cheese, and minced onion in mixing bowl; place mixture in pie crust.
In clean mixing bowl, whisk eggs, sugar, salt, and cream. Pour mixture into pie shell (over other ingredients).
Bake 15 minutes at high heat (425); turn down oven temperature to 300 degrees and continue cooking for another 30 - 40 minutes or until knife comes out cleaning near center.
Quiche should cool/set for about 10 minutes before serving in wedges.
