Cantaloupe Feta and Basil Tuscan Summer SaladFrom MCCAFFREY HOUSE BED & BREAKFAST INN
This recipe is from our son, Casey. It’s his favorite summer salad for Breakfast, Lunch or Dinner. Enjoy!!
1 ripe well-washed cantaloupe, peeled and cut into bite-size pieces
Plenty of fresh basil, cut into thin ribbons
1 cup of feta, crumbled
½ Cup of good olive oil (Extra virgin)
Kosher salt and pepper to taste
Combine all ingredients in a bowl and serve immediately or chilled.
