The Big Chief’s Quiche Casserole For Vegetarian Pilgrims


Cooking Time:

45 minutes


  • 8 organic eggs
  • 2 shredded potatoes
  • 1/2 onion sliced
  • 1 zucchini sliced 1/8 inch
  •   salt
  •   pepper
  • 1 teaspoon herbs de Provence
  • 1 grated garlic
  • 1 ½ cups heavy cream
  • 1 cup shredded white cheddar
  • 1 tablespoon Dijon mustard
  • 1/2 cup cream cheese or goat cheese
  • 2 tablespoons olive oil
  • 2 deep 9" Organic Non-GMO Pie Crust


sauté the onions in olive oil
then add the potatoes
add salt pepper, herb de Provence, and garlic
cook them until they take color and layer them on the bottom of the pie crust
then sauté the sliced zucchini in olive oil
sprinkle salt & pepper and herbs de Provence
fan them on top of the potatoes
add a coat of cheddar
then crumble the goat cheese or cream cheese on top of the cheddar
whisk the eggs with the mustard, salt, pepper and heavy cream
pour on top of the cheese, bake for 45 minutes at 350 degrees.

What To Be Careful Of
At 30 minutes looks cooked but isn't. It needs the 45 minutes

Sliced organic heirloom tomatoes with balsamic & olive oil, small breakfast salad, crusty buttered French bread
