Apple Thyme Vinaigrette

From MACARTHUR PLACE - SONOMA'S HISTORIC INN & SPA
1 whole egg
1 teaspoon chopped garlic
1 bunch thyme, rough chopped, stem and all
1 cup apple juice concentrate
1/2 cup apple cider vinegar
3 cups olive oil
1 chopped shallot
3 tablespoon honey
salt and pepper to taste

Place whole egg in blender with shallot and garlic. Blend for 1 minute. Add concentrate, vinegar and honey. Blend. Add chopped thyme. With the machine running, slowly add the olive oil. The mixture should begin to emulsify. Adjust seasonings.
