Sherried Creamed Eggs with Mushrooms
From 1501 LINDEN MANOR BED & BREAKFAST
1 1/2 pounds of fresh mushrooms, sliced
2 tablespoons butter
2 tablespoons butter
6 tablespoons butter
6 tablespoons all-purpose flour
2 cups cream
salt and pepper to taste
3/4 cup sherry
8 hard-boiled eggs, sliced
8 english muffins
Saute the mushrooms in 2 tablespoons of butter. Set aside.
In medium saucepan melt 6 tablespoons butter, stir in flour, add cream, salt and pepper and sherry. Simmer until thick.
Add mushrooms to sauce. Place sliced eggs on english muffins. Serve mushroom sauce over english muffins.
