Huevos con Papas

From LEGACIES BED & BREAKFAST
1 24oz. package frozen Oreida hash browns (southwest flavor-plain shredded ones preferred)
2 cups grated cheese, a mix or you can use just cheddar
1 4 oz. can diced green chiles
1 cup cooked diced ham (can use small pieces of bacon or sausage)
6 eggs
freshly ground black pepper
red, yellow or green pepper (sliced in rings)

Grease a 13x9 baking dish, sprayed with vegetable oil. Combine hash browns, cheese, chiles and ham and place in baking dish. Arrange pepper rings over the top, crack one egg into each ring, and sprinkle with pepper. Bake at 375 for 30 minutes, or until eggs are fully cooked.

Serves 3-6 persons

*Fine to cook Huevos con Papas in individual Ramekins. Spray each dish with cooking oil and add about a teaspoon of water in bottom of each. Baking in the Ramekins cuts time to about 20 minutes. Cover the tops with foil after about 15 mins cookings, so as not to bake eggs too done!
