BAKED PEACH PUDDING

From THE HOMESTEAD BED & BREAKFAST
2 cups sliced peaches (if using canned, drain before using)
3/4 cup sugar
1/2 cup milk
4 Tbs. butter
1/2 tsp. salt
1 tsp. baking powder
1 cup all purpose flour

TOPPING
1 cup sugar
1 Tbs. corn starch
1/4 tsp. salt
1 cup boiling water

Preheat oven to 325 degrees Pace peach slices in bottom of 9" baking dish. Sprinkle lightly with sugar. Cream together 3/4 cup sugar with 4 Tbs. butter. Add alternately the dry ingredients & milk & spread over peaches. Cover this with topping made of cornstarch, salt & sugar. Pour 1 cup boiling water over all this. Bake 50 minutes. This is delicious served warm topped with ice cream.
