Poached Pears in Strawberry and Port Reduction
From HIGHLAND MANOR BED & BREAKFASTServes 8, but recipe can be cut in half.
Ingredients:
1 lb package of frozen strawberries, thawed and pureed
2 cups water
1/2 cup sugar
1 1/2 tsp vanilla
1 tbs lemon juice
1 tbs ground cinnamon
8 ripe pears (any type) pealed and cored
1/2 Port (or other sweet) wine
Mint leaves for garnish
Combine first 6 ingredients in 4 qt pot. Bring to boil. Add pears and simmer, covered, for 30 minutes.
Remove pears.
Boil liquid, uncovered, until reduced by 1/3. Add Port and boil for 15 minutes.
While liquid is reducing, prepare pears for serving/presentation: Standing pear upright, use a paring knife to cut each pear into approx 8-10 sections, starting about 1/8 of an inch from the top. Sections should be attached at top of pear.
To serve, place each pear in a dessert bowl or plate, with the sections "fanned out". Spoon sauce around each pear and garnish with mint leaves.
