Kartoffelsen Salat (Potato Salad)

3 pounds medium potatoes
1/4 cup finely diced bacon
1/4 cup onion, chopped
1 tablespoon flour
2 teaspoons salt
1 1/4 tablespoon sugar
1/4 teaspoon pepper
2/3 cup cider vinegar
1/3 cup water
1/2 teaspoon celery seed
3 tablespoons chopped parsley

Cook potatoes in jackets then peel, slice thin. Fry bacon until crisp, add onion, and cook gently one minute. Blend in flour, salt, sugar, and pepper. Stir in vinegar and water. Simmer 10 minutes, stirring constantly. Pour over potatoes, adding celery seed and parsley, mix, serve hot.
