Loaded Muffins

Ingredients
- 1 cup quick rolled oats
- 1 cup milk
- 1 cup all purpose flour
- 1/3 cup sugar
- 3 tsp. baking powder
- 1/2 tsp. salt
- 1 egg, well beaten
- 1/2 cup applesauce
- 1/2 cup raisins
- 1/3 cup chopped dates
- 1/2 cup pecans or walnuts, chopped
Directions
Combine rolled oats & milk; let stand 15 min. Stir in applesauce & egg. Sift flour, sugar, baking powder & salt in separate bowl. Add all at once to milk mixture, stirring just untill all ingredients are moistened and distributed. Fold in raisins, dates and nuts.
Fill muffin tins, greased or paper lined, 2/3 full. Bake at 400 degrees for 20 to 25 minutes. Makes about 1 doz. depending on size.
