Baked Pineapple (Baked & Puckered Englishman)
From THE INN AT HARBOUR RIDGE1/2 cup margarine (melted) (Butter is always better!) 4 slices white bread cubes (crusts off) I use English Muffins. 3 eggs - slightly beaten 1 cup sugar 2 tbs. flour 1/8 tsp. salt 1 large can pineapple - crushed or cubed (I prefer cubed) Undrained Roll bread crumbs in margarine to coat. Set aside. Mix together: eggs, sugar, flour, salt & pineapple. Place in an 8” or 9” square baking dish. Top with buttered bread cubes. Bake in preheated oven at 350 degrees until firm (approx 30 minutes). Can be cut and served in squares; I like to scoop into little bowls and have been known to glop whipped cream on top! It’s also a little dressier to cut up English muffins - nice texture, too! Does this become a baked and puckered Englishman? Guests either love this dish or hate it! Try it with baked ham - yummy!
