Breakfast Lasagna

Directions

1 medium onion, chopped

1 lb. Bulk sausage

¼ lb. Mushrooms, chopped fine

6 eggs, blended

5 oz. Jar salsa

5 oz. Mozzarella cheese, grated

5 oz. Monterey jack cheese, grated

5 oz. Cheddar cheese, grated

3 tbsp. Sour cream

 

Grease 9 x 12 pan.  Saute sausage, mushrooms and onion together.  Drain.  Combine eggs and sour cream, and whip well.  Put egg mixture in the pan and bake at 400 degrees until eggs set (5 – 10 minutes).  Remove from oven.  Spoon salsa over the eggs, add sausage mix over the salsa.  Sprinkle the 3 cheeses over the salsa.  Bake at 350 degrees for 30 minutes or until cheese is melted.  Cut into square pieces.

 

Note:  This may be made the day before--- bake eggs until set, follow the remaining directions thru sprinkling the cheeses on top.  Cover and refrigerate until time to bake.  Bake as directed above.
