Chile Cheese Puff Will Workman Style



1 doz. eggs blended with Braun mixer
1- 4 oz. can diced mild chile peppers
1 4 oz. jar of pimientos
1- 24 oz. small curd cottage cheese
2 - 8 oz Colby-Jack Shredded Cheese or 1- 1 lb. bag of Mexican Cheese
1/2 cup flour
l heaping tsp. of baking powder
dash of pepper (freshly ground)
dash of seasoning salt
1/2 stick of butter (4 tablespoons zapped at 25 seconds)

Bake in 9” x 13” Pyrex glass dish
Spray pie dishes with cooking spray or rub butter in dish before pouring in egg mixture (will rise when baking)
Bake at 350F for 60 minutes
Let cool for 10 – 15 minutes for slicing and serving
Garnish with salsa and dab of sour cream
Will serve 8-12 people with potatoes and sausage
