Banana Nutbread

From EVENING SHADE INN BED AND BREAKFAST
Makes 8 small loaves (about 3"x6"x2")

1 cup butter
1 1/2 cups brown sugar
1 1/2 cups white sugar
1 teaspoon salt
1 cup buttermilk
4 eggs
2 teaspoons vanilla
4 cups all-purpose flour
2 teaspoons baking soda
2 ½ teaspoons baking powder
4 large bananas
1 cup chopped nuts
1 cup raisins
1 cup crushed pineapple
  • Preheat oven to 350°
  • Grease and flour loaf pans
  • Cream sugars and butter
  • Add eggs and other ingredients
  • Fill loaf pans about ½" from top to prevent run-over
  • Bake 1 ½ hours

Top
