Apple Walnut Bread

Serve this with ice cream, and maybe some warmed caramel drizzle, or just on its own, as many of you have eaten it this way while staying at our Michigan Inn.

  • 2 Eggs
  • 1/2 cup Sugar
  • 1 cup Vegetable Oil
  • 1 cup Brown Sugar
  • 1 tsp Vanilla
  • 2 cups Flour
  • 1 tsp Salt
  • 1 tsp Baking Soda
  • 1 tsp Cinnamon
  • 1/2 cup Chopped Walnuts
  • 2 Granny Smith Apples, rough cut

Mix eggs, sugar, vegetable oil, brown sugar, and vanilla using a hand mixer. Mix well.

The add flour, salt, baking soda, cinnamon. Mix well.

Then add, chopped walnuts and granny smith apples.

Use the hand mixer on low just to distribute them evenly, Do Not over mix, this will mash the apples.

Pour into a 9x13 pan that has been sprayed with oil, and then bake at 350 for 29 minutes, (5 minutes longer if not using convection), let stand overnight once done, I will let it cool for some time, and cover only after a minimum of 4 hours, usually I do not cover it until the next day.
