Jay's Vinaigrette
From THE DARBY FIELD INN & RESTAURANT
1 cup Cider Vinegar
2 cup Soybean Oil
1 whole large onion
3 whole garlic cloves
1 tbl fresh ground black pepper
2 tbl Salt
3 tbl Sugar
1 tsp fresh dill
2 cup Soybean Oil

Peel the garlic and chop the onion into large chunks. Combine all the ingredients in a blender and blend on high speed until smooth and all the oil is mixed in.
Serve with any type of green salad. Serves 24.
