• Can Cooking Spray
• 1 Medium Bag Mozzarella Cheese
• 8 Eggs
• 1 Small Carton Heavy Cream
• 1 large bag Spinach
• 6 Medium Tomatoes
• 1 Box Sliced Mushrooms
• Fresh Mixed Herbs
• a touch Salt & Peppers

Preheat oven to 400F
Spray glass baking dishLayer dish as follows:
1^st spinach leaves
2^nd mushrooms
3^rd sliced tomatoes
4^th mozzarella cheese

Repeat this until dish is fullMix together in a separate bowl the heavy cream, eggs, mixed herbs and salt & pepperPoor over the layered vegetables

Sprinkle mozzarella cheese on top and bake in the oven for 45 mins or until cooked.
