Nutmeg MuffinsFrom CLAY CORNER INN
Innkeepers test and consume lots of muffins, and these nutmeg muffins are superb. Crunchy tops, tasty insides and the kind of recipe you always have the ingredients on hand (and you don't have to chop anything!). Simple, quick, yum, yum.
- 3 cup Flour
- 1 cup Brown Sugar
- 1/3 cup Butter
- 2 tsp Baking Powder
- 2 tsp Nutmeg
- 1 tsp Baking Soda
- 1 tsp Salt
- 1 cup Buttermilk, okay to use Saco dry mix
- 2 Eggs
Mix 2 cups flour, brown sugar, and butter. Save and set aside 1 cup of the mixture.
Then add to the remaining mixture (minus the one cup) the rest of the flour (1 cup) baking powder, nutmeg, baking soda, salt, butter milk and 2 eggs.
Blend by hand and fill greased muffin tins full; sprinkle with topping; bake 20 minutes at 350 F. Okay to freeze. Enjoy!!
